Breakfast Cereal Cookies

Ingredients

  • cup Unsalted Butter
  • cup Unrefined Golden Caster Sugar
  • cup Lightly Packed Brown Sugar
  • 1 Egg
  • cup All-Purpose Flour
  • 1 tsp Vanilla Extract
  • 1 tsp Gound Cinnamon
  • tsp Baking Soda
  • tsp Salt
  • 1 cup Cereal Flakes
  • cup Dried Cranberries

Instructions

  • Start reheating your oven to 176�C.
  • In a large bowl, cream together the butter, sugars and egg until smooth using an electric beater.
  • Add the flour, vanilla extract, ground cinnamon, salt and baking soda into the bowl. Beat on low speed until it�s combined well.
  • Pour and mix in the cereal flakes, rolled oats and dried cranberries. Because the dough will be stiff, you may need to do it by hand; otherwise, beat on low speed with an electric mixer until well mixed.
  • Line a pan with a baking sheet, drop 2-tablespoon portions onto a baking sheet, spacing them at least 2 inches apart. Slightly flatten each ball.
  • Bake for 12-15 minutes, or until lightly golden and then let it cool on a cooling rack.
