450gWater
20gCorn Flour
80gRice Flour
200gSelf Raising flour

Steps:
Whisk eggs and caster sugar together. Then add cooking oil, water and whisk again. Sieve corn flour, rice flour, self raising flour, baking soda into the mixture and mix well.
Filter the mixture and let it rest for 20 minutes.
Heat a pan at lowest heat and spread 1 scoop of mixture into it. Make a quick turn to make the layer as thin as possible.
Add coarse sugar, a small piece of butter, roasted peanut nibs, cream corn sugar (canned) and flip half of the pancake when it turns brownish.
