Dragon Fruit Agar- Agar

Ingredients

  • 3 L Water (5 cups)
  • 3 Pandan leaves
  • 20 g Agar-agar sticks
  • 50 g Fresh honey (choose any preferred sweetener)
  • 1 cup Dragon fruit puree

Instructions

  • Boil water in a medium pot, then add agar-agar and Pandan leaves. Use low heat and stir occasionally until the agar-agar strips are completely dissolved. This process takes about 2 minutes. Take out Pandan leaves after turning off the heat.
  • Leave the agar-agar to cool for a minute or two before adding the dragon fruit and honey (because high temperature will destroy the enzymes in the fruit and honey), stir well.
  • Pour into a mold or a 20cm x 20cm tray. Once completely cooled, put it in the refrigerator for 30 minutes.
  • Use a butter knife to lightly scrape the edge of the mold and gently squeeze the mold to remove the agar-agar from the mold. If you are using containers, cut them into squares or rectangles with a butter knife!
