Instructions
Bake almond nibs at 170c for 6 minutes and shred the carrot.
In another bowl, whisk corn oil, brown sugar at low speed and add 3 eggs once at a time and whisk at high speed.
Sift self-raising flour and mix well. Add the shredded carrot, roasted almond nibs, raisin and mix until well combined.
Line 6 inch loose base mold with baking paper and pour the mixture into it. bake at 150c for 45 minutes.
