Healthy Carrot Cake

What happens when you feel like eating cake but want to stay healthy at the same time? Carrot cake is the answer to your problems. Carrots are rich in vitamins, minerals and fiber. They are also a good source of antioxidants.

Ingredients

  • 60 g Almonds
  • 170 g Carrot
  • 3 Eggs
  • 180 g Corn Oil
  • 90 g Brown Sugar
  • 210 g Self Raising Flour
  • 70 g Raisin

Instructions

  • Bake almond nibs at 170c for 6 minutes and shred the carrot.
  • In another bowl, whisk corn oil, brown sugar at low speed and add 3 eggs once at a time and whisk at high speed.
  • Sift self-raising flour and mix well. Add the shredded carrot, roasted almond nibs, raisin and mix until well combined.
  • Line 6 inch loose base mold with baking paper and pour the mixture into it. bake at 150c for 45 minutes.
