Mango Coconut Bundt

Ingredients

  • 1 cup Fresh mango
  • cup Sugar
  • 1 tsp Coconut essence
  • cup Unsweetened, shredded coconut
  • 3 Eggs
  • 8 oz Coconut milk
  • 2 tsp Ground ginger
  • 2 tsp Baking powder
  • 3 cups Flour

Instructions

  • Mash together sugar and mango. Beat in eggs and add coconut and essence. Fold in coconut then add flour, ginger and baking powder. Pour into bundt pan and bake for 40 minutes at 170�C or until a knife comes out cleanly.
  • Let cool completely before taking out of pan.
