Place water, blue pea flower and Chek Hup Diamond Rock Sugar in a pot and let it simmer until sugar has melted.
Place lychee into a baking pan and pour over the jelly solution. Let it sit at room temperature for about 30mins.
Once set, gently put the bloomed chia seed covering the surface.
In another pot, place milk, Chek Hup Diamond Rock Sugar and agar agar powder and let it simmer until sugar has melted. Then gently pour into baking pan.
Let it set in the chiller for 1 hour.
Notes
Tips and guides:
To avoid separation of the puddings, during the first chilling time, avoid chilling it in the chiller. Let it chill at room temperature.
Do not use lychee water if you are using blue pea flowers because the colour will change from blue to purple.
