  • For the filling
  • 100g butter, softened
  • 140g icing sugar, sifted
  • drop vanilla extract (optional)
  • half a 340g jar of strawberry jam
  • icing sugar to decorate

Methods: 

  1. Preheat your oven to 190°C (or 170°C for fan ovens, or gas mark 5). Grease two 20cm sandwich tins and line them with non-stick baking paper.
  2. In a large bowl, beat 200g caster sugar, 200g softened butter, 4 beaten eggs, 200g self-raising flour, 1 tsp baking powder, and 2 tbsp milk until smooth and soft.
  3. Divide the batter between the tins and smooth the surface. Bake for about 20 minutes until golden, and the cake springs back when pressed. Turn the cakes onto a cooling rack and let them cool completely.
  4. For the filling, beat 100g softened butter until smooth, then gradually beat in 140g sifted icing sugar and a drop of vanilla extract (if desired).
  5. Spread the buttercream over the bottom of one cake, then top with 170g strawberry jam. Sandwich the second cake on top. Dust with a bit of icing sugar before serving. Store in an airtight container and consume within 2 days.
