Agar powder which is known as ‘kanten’ in Japanese is made of red algae. The agar plant contains a gel-like substance. Agar powder is a thickening and gelling agent which can be used to make liquid or semi-liquid to become firm. Agar powder is more common in Asia especially in Japan in the early 17th century. European countries mostly utilize gelatine as their thickening agent.
