Vermicelli or also known as bee hoon is a thin rice-flour noodle that is very commonly used in Southeast Asian countries including China, Thailand, Vietnam, and Malaysia. This noodle is a basic ingredient for a lot of yummy dishes such as stir fries, soups, spring rolls and salads. Most vermicelli is made from two simple ingredients which are rice flour and water.
Aside from broken rice or rice flour, vermicelli can be also made of mung bean or other types of starches. Despite that, vermicelli is still made into very thin strands that you do not even need to cook for so long. Just a simple soak into hot water is enough to prepare it. Vermicelli can also be fried. It will expand to form a tangled, delicate, and shaped like a nest when it is fried. The fried vermicelli is white in colour and has a very crunchy texture which makes it used as a garnish.
