Healthy Carrot Cake

Prep Time 30 minutes
Cook Time 45 minutes

Ingredients

  • 60 g Almonds
  • 170 g Carrot
  • 3 Eggs
  • 180 g Corn Oil
  • 90 g Brown Sugar
  • 210 g Self Raising Flour
  • 70 g Raisin

Instructions

  • Bake almond nibs at 170c for 6 minutes and shred the carrot.
  • In another bowl, whisk corn oil, brown sugar at low speed and add 3 eggs once at a time and whisk at high speed.
  • Sift self-raising flour and mix well. Add the shredded carrot, roasted almond nibs, raisin and mix until well combined.
  • Line 6 inch loose base mold with baking paper and pour the mixture into it. bake at 150c for 45 minutes.
