Hi guys, on this very weekend is our last episode of featuring Malaysia’s food according to the 13 states and wow, time really flies. And to end this series with a bang, let’s learn how to cook Sabah’s Mee Tuaran.

Mee Tuaran is one of the greatest representations of Sabah. Its golden colored noodle is served with glazed roasted chicken that oozes out the perfect flavour which many enjoy.

Mee Tuaran With Chicken Char Siew

Servings 2
Prep Time 45 minutes

Ingredients

  • 300 g Wantan Noodles / Tuaran Noodles
  • 2 Cloves Garlic
  • 150 g Green Mustard
  • 70 g Red Chilis
  • 2 nos Eggs
  • 1 tsp White Pepper
  • 1 tsp Chicken Stock powder
  • Salt
  • ½ tbsp Light Soy Sauce
  • ½ tbsp Sesame Oil

Chicken Char Siew:

  • 4 nos Boneless Chicken thighs
  • 1 tbsp Hoisin Sauce
  • 1 tbsp Light Soy sauce
  • 1 tbsp Honey
  • ½ tbsp Chicken Stock Powder
  • 1 tbsp Sugar
  • ¼ tsp Salt

Instructions

  • Lets start with the noodles, finely chop the garlic then cut the green mustards into smaller pieces. Finally , thinly slice the red chilis
  • Next, deep fry the noodles in hot oil until it is almost golden brown. Then, strain it to remove excess oil.
  • Set up a pot with boiling water and boil the deep fried noodles for not more than 2 mins
  • Next pour in about 3 tbsp of cooking oil into a wok. Then add in the garlic and stir fry until fragrant.
  • Once the garlic is fragrant, add in the eggs and stir until it is medium scrambled.
  • Then add in the noodles together with the rest of the ingredients. And fry until everything is well cooked.
  • For the chicken char siew, combine everything in a bowl, then add in the chicken. Marinate for at least 30 mins.
  • Heat up the oven at 180c and bake for 15 mins.
  • Then, increase the temperature to 190c and bake for another 5 mins.
  • Serve the noodles together with the chicken.
