The classic Egg Fried Rice is the simplest type of fried rice you can try if you are just starting off. It’s so easy and quick cause you just need some eggs and condiments for taste.

Total time: 40mins

Hero ingredients:

  • Eggs
  • Cooked rice

Sidekicks:

  • Onion
  • Spring onion
  • Vegetable oil
  • Salt
  • White pepper
  • Light soy sauce

Tips: Make sure that you use cooled, cooked rice to prevent the rice from clumping up. What I like to do is use the rice I cooked the previous day that I kept cool in the fridge. This helps to avoid the rice from sticking to the pan and getting charred.

2.Chinese Fried Rice

I used to always have this as a kid. It’s so delicious! Savoury, salty and satisfying! The Chinese Style Fried Rice usually uses Chinese sausages (Lap Cheong), eggs and steamed rice.

Total time: 20mins

Hero ingredients:

  • Chinese lap cheong sausage
  • Eggs
  • Cooked rice

Sidekicks:

  • Garlic
  • Frozen mixed vegetables
  • Cooking oil
  • Salt
  • White pepper / black pepper
  • Soy sauce
  • Fish sauce

Get the instructions!

Tips: Chinese Fried Rice emphasises the use of cooking fried rice under intense heat on a steel wok to give the ‘wok hei’ effect. This means that you will be able to feel the aroma and taste from cooking with the wok or breath of the wok.

3. Kampung Fried Rice

Now this one packs a punch of flavor! Salty but extremely tasty! It’s very popular among Asians.

Total time: 25mins

Hero ingredients:

  • Anchovies
  • Eggs
  • Chicken breast meat
  • Cooked rice

Sidekicks:

  • Garlic
  • Belacan
  • Bird’s eye chili (red and green mix)
  • Shallots
  • Cooking oil
  • Kangkong (water spinach)
  • Long beans
  • Kicap manis (Indonesian sweet soy sauce)
  • White pepper
  • Sugar
  • Salt

Get the instructions!

Tip: Be sure to break the rice before adding them to the wok. Otherwise, there will eb lumps, and the rice won’t be seasoned well. Some parts may taste more salty and some bland.

Also, to make the paste, it’s advisable to manually blend the ingredients with a mortar and pestle. This is so that it provides the best kind of texture, rather than using a blender that produces a texture that is too fine. (and not in a good way)
