There’re no denying that pasar malams have the tastiest street food, and one of the best street food in Malaysia is the apam balik! The apam balik, or what we’ll call in this recipe, the Crunchy Peanut Pancake, is a fluffy pancake filled with sweet corn and peanuts. This soft pancake is usually made on the spot right after you order, so that you can enjoy it while it’s still piping hot and delicious! These days, not only sweet corn and peanuts, it also comes in a variety of other sweet and savoury fillings! These pancakes have a thick surface with thin and crispy sides, a perfect snack for both kids and adults!
Crunchy Peanut Pancake
Instructions
Steps:
- Whisk eggs and caster sugar together. Then add cooking oil, water and whisk again. Sieve corn flour, rice flour, self raising flour, baking soda into the mixture and mix well.
- Filter the mixture and let it rest for 20 minutes.
- Heat a pan at lowest heat and spread 1 scoop of mixture into it. Make a quick turn to make the layer as thin as possible.
- Add coarse sugar, a small piece of butter, roasted peanut nibs, cream corn sugar (canned) and flip half of the pancake when it turns brownish.
