5 Refrigerator Cakes You Don’t Need to Bake

Easy and Quick.

These no-bake cake recipes usually require ingredients that you can find at home or that are easily available at supermarkets. Plus if you are on a budget, some of these suggestions will be very practical — three to four elements and you are all set! 

Classic Cheesecake

Ingredients

  • 1/2 cup Butter (melted)
  • 1 1/2 cup Graham cracker crumbs
  • 1/4 cup Granulated sugar
  • 1/2 tsp Kosher salt
  • 2 cup Heavy whipping cream (cold)
  • 3 (8 oz.) Packages cream cheese (room temp)
  • 1 cup Powdered sugar
  • 1 tsp Vanilla extract
  • Fruit (optional)

Instructions

  • Lightly coat a springform pan with nonstick spray. Set aside
  • Combine butter, graham cracker crumbs, sugar, and salt, and in large bowl.
  • Press the mixture into the pan and about 1/2 inches up the sides. Place in the freezer while you prepare the filling.
  • Using a hand mixer, beat the heavy cream on medium-high speed until stiff peaks form.
  • Remove the whipped cream from the mixing bowl and set aside.
  • In the same bowl, combine cream cheese, powdered sugar, and vanilla extract on medium speed until smooth and creamy, about 2 mins.
  • Add in whipped cream and fold into the mixture.
  • Spread the cheesecake filling into the chilled crust. Top with fruit.
  • Cover and chill overnight. Slice and serve!

Oreo Cheesecake

Ingredients

  • 50 pcs Oreo cookies (divided)
  • 1/4 cup Butter (melted)
  • 3 cup Cream cheese (softened)
  • 1 1/2 cup Powdered sugar
  • 1 1/4 cup Heavy whipping cream

Instructions

  • For the crust, combine melted butter and 25 oreo cookies in a food processor. Process until it starts to stick together.
  • Press the mixture into a spring form pan and about 1/2 inches up the sides. Set aside.
  • In a medium bowl, combine 1/4 cup cream, Microwave on high in 20 second intervals, stirring well each time, until melted and smooth. Set aside.
  • In large bowl, beat cream cheese with a hand mixer until smooth. Add powdered sugar and mix well.
  • Mix in remaining 1 cup cream until incroporated, then beat on high speed until you achieve stiff peaks.
  • Reserve 5 oreo cookies for garnish and crush the remaining Oreo cookies with a rolling pin. Stir into cheesecake filling.
  • Spread into the crust, cover, and refrigerate overnight. Slice and serve!

Boston Cream Pie

Ingredients

  • 1 box Graham crackers
  • 2 box Vanilla instant pudding mix
  • 3 cup Milk (cold)
  • 1 cup Heavy cream
  • 1/4 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1/2 cup Semi-sweet chocolate chips
  • 1 cup Sugar
  • 1/4 cup Milk
  • 1 tsp Vanilla extract

Instructions

  • Using a hand mixer, mix heavy cream until you achieve soft peaks. Add in powdered sugar and vanilla, and mix until stiff peaks form, Set aside.
  • Line a baking dish with a layer of graham crackers. Break them into small pieces to fill in the gaps.
  • In a separate bowl, combine pudding mix and milk and mix well. Fold in the prepared whipped cream.
  • Pour 1/2 of piudding mixture over graham crackers. Place another layer of graham crackers, then pudding mix. Repeat this process once more, ending with a layer of graham crackers.
  • In a sauce pan, mix together butter, chocolate chips, sugar, milk, and vanilla extract. Cook for about 5 minutes over a very low simmer until smooth.
  • Pour over graham crackers, spreading evenly.
  • Cover and chill overnight. Slice and serve!

Tiramisu

Ingredients

  • 1 cup Heavy whipping cream
  • 1 cup Mascarpone cheese (room temp)
  • 1/3 cup White sugar
  • 1 tsp Vanilla extract
  • 2 cup Espresso or strong coffee (room temp)
  • 1 pack Ladyfinger or broas
  • Cocoa powder (for dusting)

Instructions

  • Beat whipping cream, sugar, and vanilla until soft peaks form.
  • Add in mascarpone cheese and combine until stiff peaks form.
  • Quickly dip ladyfinger in coffee, then layer the bottom of a glass baking dish with ladyfingers.
  • Spread 1/2 of heavy cream mixture evenly on top of the ladyfingers. Repeat process with the second layer of ladyfingers and cream mixture.
  • Using a strainer, dust the top of your tiramisu with cocoa powder. Cover and refrigerate overnight.
  • Slice and serve!

Mango Float

Ingredients

  • 2 cup Whipping cream
  • 1 can Sweetened condensed milk
  • 1/2 box Graham crackers
  • 5 ripe Ripe mangoes
  • 1/2 tsp Vanilla extract (optional)

Instructions

  • With a hand mixer, beat the whipping cream in a bowl until it doubles in size.
  • Add in condensed milk and vanilla extract. Mix until well-combined.
  • Layer the bottom of a glass baking dish with graham crackers. Break them into small pieces tp fill in the gaps.
  • Spread 1/3 of the cream mixture evenly on top of the graham crackers. Top the cream with sliced mangoes.
  • Place another layer of graham crackers, cream, and mangoes. Repeat this process once more, ending with a layer of sliced mangoes.
  • Cover and refrigerate overnight to set completely.
  • Slice and serve.
